In a short five-year period, Starward has managed to get two respectable awards under their belt; World’s Best Craft Whisky 2016 (Wine Cask – now renamed as Nova) and Australia’s Best Single Malt 2017 (Solera) — a commendable achievement.
On a mission to cement Australian whisky as a serious category on the world stage, founder David Vitale explains, “I started Starward with a simple vision; offer the world a distinctly Australian whisky unshackled from tradition. We mature our whisky in red wine barrels to create a bridge for wine drinkers to discover whisky in an approachable and accessible way. We felt it was important for us to create a flavour-full but easy-drinking and approachable whisky that talks to the place it is made, like very few whiskies can”.
Following through this vision, last week, David and the Starward team launched the quintessential Australian whisky – “Two-Fold”. Much like the wine from the barrels that Two-Fold is matured in, it’s designed to be enjoyed at the dinner table, and shared with family and friends. As whisky drinkers, we have our collection of special bottles that are kept under lock and key — and although we like to be generous, sometimes serving those less-favourite bottles may appear like we’re holding back. But now there is whisky dedicated to this very occasion, and priced at $65 AUD it’s the perfect offering.
As the name hints, it’s made from two types of grains, barley and wheat; making it a lighter style of whisky that lends itself for use in cocktails. On the nose you’ll find soft aromatics of red fruit and warm vanilla spice. Lightly toasted oak and tropical fruit characters will come through in the tasting and don’t be surprised to find a soft tannic structure, drawn from the wine barrels it’s aged in.
A nice simple cocktail to try using Two-Fold is the Laneway Boulevardier:
