A Potent Pairing: Glenmorangie and KOI Dessert Bar Announce Pop-Up Bar In Sydney
Illustrious whisky makers, Glenmorangie, have announced an exclusive collaboration with KOI Dessert Bar’s Pastry Chef, Reynold Poernomo to celebrate the tenth anniversary of one of Glenmorangie’s most experimental creations, Signet. The two innovators in their respective industries are joining together to open a pop-up bar in Sydney’s Barangaroo that will run from the 26th-28th of September.
Signet is the world’s first whisky produced using high roast ‘chocolate’ malt barley and is distilled for just one week of the year. The result is a groundbreaking spirit that produces a unique espresso intensity that isn’t found elsewhere in the whisky world. This intensity is then tempered over many years with a curated selection of specially crafted barrels that bring out a series of new flavours: creaminess arrives from bourbon barrels, sweets from sherry butts, while the spicy foundations are drawn from virgin charred oak casks. The whole flavour profile is then balanced out using some of Glenmorangie’s oldest stocks.
This process culminates in a unique blend of sizzling spices and bitter mocha, complemented by a mellow finish with notes of butterscotch. As Signet is such a sweet and distinctive spirit, it will be paired perfectly with a series of equally delectable desserts crafted by Poernomo himself – including his signature dish, Nomatella. Other menu offerings include The Chocolate Delight and The Fire and Ice, both of which are ideal companions to a tumbler of Signet.
After gorging on dessert, those who are enamoured with Signet will have an opportunity to continue exploring the whisky through a set of specially crafted cocktails designed by three of Sydney’s premier bars: Kittyhawk, Button Bar and Barangaroo House. The Signet Mandarin Old Fashioned and Espresso Martini will bring a new twist to old classics, while The Signet Jaffa Sour is a perfect indulgence for those with a sweet tooth.
The pop-up bar will be situated at Exchange Square, Barangaroo, and is open from 12pm to 10pm each day. Individual drinks start at $20, while a dessert pairing will cost $36.
